Yeast Conversions: Active Dry, Instant, and Fresh Made Simple

Yeast packets look interchangeable, but the dose is not. Converting by weight keeps the rise predictable instead of guesswork.

What is the Yeast Converter?

Different yeast types are not used in equal amounts, and this converter swaps between active dry, instant, and fresh yeast by weight. Ratios are the standard home-baking guides: instant is the lightest dose and fresh is the heaviest. Fresh yeast also needs checking for freshness before use.

How to use it

  1. Enter the yeast amount in grams.
  2. Choose the yeast type the recipe uses.
  3. Choose the type you own and click Convert Yeast.

Worked example

7 g of active dry yeast converts to about 5.25 g of instant yeast.

How much instant yeast replaces 7 g of active dry yeast?

About 5.25 g, because instant yeast is used at roughly three-quarters of the active dry amount.

Frequently asked questions

Does instant yeast need dissolving first?

No. Instant yeast can be mixed straight into the flour, while active dry yeast is usually dissolved in warm liquid first.

Why is fresh yeast measured so much higher?

Fresh yeast contains more water and is less concentrated, so a recipe needs roughly 2.4 times the active dry weight.
